Many (not necessarily all) are following a belief in politics that my enemy's enemy is my friend.
Most world leaders and members of the media hate America and if they see us supporting Mubarak, they will support his opposition. After all, ANYONE who opposes a tyrant is good. In most countries, the US has the support of the leaders or the people - rarely both.
Mubarak was no prize but how peaceful was that border, really? I don't see his overthrow as a good thing but it's not like Mubarak was a champion of freedom or even of peace with Israel. Sure he cooperated with Israel and with the US military but would that have happened absent more than $1 billion a year in US taxpayer dollars? How much did he do in Gaza? Egypt shares a border with Gaza, too.
In any case, there is less and less space between the old 'secular' dictators and the Islamists. They are in bed with one another more than we like to admit. Mubarak is in his eighties. Even if he survives this crisis he won't live forever. Sooner or later we will have to deal with his successor. It's not likely to be a freedom-loving secularist. Like the song says: meet the new boss, same as the old boss.
I'm not going to pretend Israel and Egypt shared any kind of real peace but I will say that the border shared with Egypt was not one that we worried about. Now, with the thought of the Brotherhood controlled Egyptian army at the border, there is cause for alarm. I am afraid for my country and myself.
